Hey All! Sorry For the MIA

I am sorry I just started this post and I haven't followed up as of yet. Seems life has been getting in the way the last couple days. Tomorrow I will post what I would have for each of the last couple days. Tonight, I will post one recipe which happens to be my favorite fast food breakfast which is very easy to replicate. It is the SuperSonic Breakfast Burrito from Sonic's right next door to my work. It goes like this for anyone who doesn't know.

SuperSonic Breakfast Burrito

2 eggs
about 10 jarred jalapenos
8 crispy tater tots
1/4 cup diced onions
1/4 cup diced green peppers
1/4 cup diced tomatoes
6-8 sausage bits, linked or crumbled breakfast sausage
2 pieces american cheese
picante sauce (optional)
2 flour tortillas

Fry the sausage according to package instructions. For links when done, cut into small bits. In another pan, sautee the onions and peppers in butter or oil for about 2 minutes. Add two eggs and scramble in the vegetables. When completed, add the sausage to the eggs. Serve mixture into the flour tortillas and top with jalapenos, tomatoes, tater tots and cheese. Wrap into a burrito and microwave for 45 seconds. Serve with picante sauce.

April 30th's Daily Serving: Cream Cheese Chicken

Today's daily serving brings you a beautiful recipe from a very special person: my grandma!!! She is renowned for her simple meals; not adding too much extras to allow the flavor of the main dish to season the food. I have replicated this dish very easily since it is so easy, and it is absolutely delicious and can be a very impressive presentation as well. Here's how we do it!

Ingredients:

3 large boneless, skinless chicken breasts
1 pkg bacon, uncooked
1 pkg whipped chive and onion cream cheese
Shredded parmesan cheese

Directions:

Preheat the oven to 375.

Butterfly the chicken breasts (cut a cross-section through the chicken without slicing all the way through). Spread the cut chicken out on a cutting board. Use a meat tenderizing mallet to beat the chicken to a thin fillet and repeat with each of the three breasts. Spread the whipped cream cheese liberally on the top side of each fillet. Once covered on the topside, start at one end othe breast and roll it completely. Once all three fillets are rolled, put another thin layer of cream cheese over the top of each roll. Wrap bacon completely around each chicken roll from left to right; the cream cheese on top of the chicken rolls should keep the bacon in place. Bake in the oven for 45 minutes to an hour until the bacon is crispy around the outside. About 5 minutes before the chicken is complete, sprinkle shredded parmesan cheese over the top of the breasts. Mashed potatoes and asparagus, green beans or broccoli are a wonderful complement to this dish.

Day 1: Reflections on Life and Food

Hello everybody, this is my first entry, and I am glad to say, that I am very happy about all the ideas I want to share with you about my biggest passion: cooking! I love eating and I love cooking, and I love testing new recipes on unsuspecting houseguests! This blog is meant to be fun, informative, full of random info and humor as well as history lessons and the food that got the people during that time through. I love research, and if you're looking for some fun while learning new tastes as well as being educated and entertained all at once, you've come to the right place. This blog is a precursor and info-gatherer for my website that will be launched in June. I hope to see lots of people coming to The Salted Chef for everything they ever wanted to know (or didn't know you wanted to know) about foods now and from long ago! All of my posts will include the food, the recipe, any history involved, and/or interesting things about the person or source I got it from. I also would like to hear about foods other people love and encourage people to submit thier favorite foods and the reason why they are so special. The food is awesome, but nobody should forget what made it possible for us to have it today.
